The nose was beautifully soft, fragrant and scented with notes of light olive oil, cut grass, carbon paper, old ink wells, anthracite, freshly kilned malt, barley sugars, Scotch broth and Serrano ham. Further notes of lanolin, mineral oils and herbal teas lingered underneath. Water brought a more chiselled and taut profile. Full of chalk, pebbles, graphite, soft wood spices and buttery toasty qualities. Like a well-aged Montrachet. The palate displayed initial notes of sage, lemon peel and putty with cough medicines, bay leaf and tea tree oil. Still light but with an impressive complexity. Reduction brought out coconut water, petrichor, trail mix tarragon, rose jelly and a light sootiness. A soothing finish yielded marjoram, nettle tea, gorse and a lingering waxiness in the aftertaste.
