Highland Park 20 Jahre - 2000 Orcadian nights
Full of crisp sea air, crushed chalk, brittle minerals, herbal peat smoke, heather ales, white pepper, beach pebbles, waxed jackets and dried wildflowers. With water we got shy notes of sandalwood emerging, then lightly smoked herbs, old oily rags, seaweed flakes in ramen broth and a saline, umami-tinged peat smoke. The palate was riddled with beautifully elegant, herbal peat smoke. Some langoustine grilling over hot coals, lemon cordial, smoked white fish, lanolin, hessian, creel nets and tarry old rope. Water brought metal polish and a hyper pure, vivid seashore quality. Heathery peat smoke, soot and minerals.
