Details about the Distillery

The Gin

Canaïma is a national park in the Amazon region. The DUSA Master Distiller headed there in search of special flavours and botanicals. Together with the local village communities, he harvested various locally grown fruits and herbs for his Gin. Thus, Canaïma Gin combines exotic Amazon ingredients with traditional Gin botanicals. Among the classics are juniper, lemon and orange peel, angelica root or coriander. From the rainforest, six regional ingredients were chosen, including palm fruits such as acai and seje, merey (cashew tree) or uva de palma, the fruit of the moriche palm, known as the 'love fruit' due to its high content of female hormones. The orange fruit túpiro and the copoazú fruit, from whose seeds chocolate is made, round off the exotic aroma.

Der Rum

The blended Rum Botucal is also produced at DUSA. For this, molasses with a high sugar content and sugar cane honey are used. With the latter, the juice from the first pressing of the sugar cane is processed immediately, producing a honey-like consistency.

For the distillation of the Rums, the distillery uses column stills for the continuous distillation of its light Rums, a steam boiler for the medium-heavy Rums and copper pot stills for the more complex distillates.

The Production

The botanicals are first soaked individually in neutral alcohol during maceration so that aromas can already be released. Then each botanical is distilled individually with the spirit in the copper pot still. In this way, the maximum aroma can be extracted from each of the fruits and herbs. With the subsequent blending, the balanced Canaïma Gin is created.

History

The beginnings of the DUSA distillery date back to 1959, when it was owned by Licorerías Unidas S.A., whose main shareholder was one of the largest Gin producers, Seagrams. This was conducive to the goal of creating a Gin with ingredients from the Amazon.

The DUSA distillery is committed to the rainforest and donates 10% of the profits of each sold bottle to NGOs that work to improve the lives of the indigenous Amazonian people and to reforest the rainforest.
