Wild

An ancestor of Max Wild, who runs the distillery today, began producing fruit brandies as early as 1855. The first Whisky distillation took place in 2002. In addition, the distillery from the Black Forest also produces Gin and Rum.

Details about the Distillery

The Whisky

The distillery from the Black Forest produces the Blackforest Sherry Cask and the smoky Blackforest Peated, which are made from barley malt dried over peat fires. The grain used for the Blackforest Wild Whisky is the distillery's own cultivated summer barley.

The distillery places particular value on artisanal production. Thus, specially bred yeast is also used for the Blackforest in order to obtain particularly fruity aromas.

For connoisseurs who prefer to possess their own cask, the distillery offers a special bottling. Here, the customers can choose for themselves which cask size and which distillate he wants. The cask type, storage time and alcohol content can also be determined online in a configurator. If the bottles are then filled, there is also the option of deciding on the bottle type and labelling.

The Gin

For the Blackforest Creative Wild Gin, the distillery uses 65 botanicals, divided into small groups (citrus fruits, juniper, spices) and added to the Gin. Each of these groups is macerated and distilled individually.

In contrast to the Creative Wild, the Traditional Wild Gin is based on the classic London Dry Gin. In addition to the balanced juniper note, many fresh botanicals such as basil, lemon, lime and ginger are present. A total of 45 ingredients are combined in this Gin. The steam extraction process is used here, whereby the citrus peels are not soaked in the alcohol, but only suspended in an aroma basket in the rising alcohol steam. As a result, the citrus aromas are extracted particularly gently and thus taste more intense.

Before the Gins are bottled, they are stored in clay amphorae for six to twelve months. 

The Rum

In addition to Whisky and Gin, the distillery also produces Blackforest Wild Rum. 

For the production of their Madeira Cask Rum, the distillery uses organic sugar cane molasses, which is fermented spontaneously and openly. Afterwards, a double distillation takes place, which ensures fruity estery notes. After a storage time of ten years in French oak barrels, ex-bourbon and cognac barrels, they are brought together.

The Blackforest Spiced Rum Barrique is made from sugar cane molasses from Paraguay. Before the subsequent fermentation, which takes place spontaneously and without the addition of pure yeasts, the molasses is diluted with Black Forest spring water. This Rum is also distilled twice in copper stills. The Spiced Rum Barrique is matured for six years and six different barrels are used.

The Storage

The triple distilled Blackforest Sherry Cask is matured for eight years. Three different casks are used, with the Pedro Ximénez Sherry cask standing out in particular. Imported directly from Jerez de la Frontera, the Wild distillery fills the casks with the Blackforest Wild Whisky shortly after they are emptied.

After a double distillation, the Blackforest Peated is stored for six years in American white oak barrels as well as Bourbon and Cognac casks so that its fruity character is emphasised and combines harmoniously with the smoke.

The History

Three different generations are represented in today's Wild distillery. Max Wild studied beverage technology and learned distilling from his grandfather Franz Wild Senior. Today, he runs the family business together with his brothers Manuel and Lukas. Franz Wild Junior was also introduced to the world of distilling by his grandfather and father. Thanks to him, the distillery can look back on a large stock of meadow orchards, the yield of which benefits the various noble brandies. Coming from a family of fruit growers, Franz Wild Senior carried on the family heritage and distilled unusual fruit varieties as early as the 1960s. Each of the three generations of distillers working together at the Wild distillery has also been dedicated to their own line of fine spirits: 6-, 12- and 18-enders.

The Visitor Centre

The Wild family offers guided tours of the production hall and the large distillery, during which they explain how the distillery works. Afterwards, you get a few tastings and can take a look around the vinotheque and the orchards. In addition, various tastings are offered on site or online, which can be booked via the distillery's homepage.
