Tipperary Boutique Distillery
Tipperary Boutique Distillers was previously only known as an independent bottler. Since 2020, their own distillery on Ballindoney Farm in County Tipperary is finally ready and they produce Irish Single Malt Whiskey and Irish Pot Still Whiskey as well as Gin.

The Whiskey
Before the first own Whiskey can be bottled, the distillery still relies on independent bottlings from other distilleries.
For each batch of the independently bottled Tipperary Watershed, Malt Master Stuart Nickerson selects six ex-Bourbon casks. This Single Malt was already launched in the early days of the distillery, which was founded in 2014. The Irish Whiskey is diluted to 47% vol with water from Ballindoney Farm before each bottle is individually numbered.
The first Whiskey distilled in Tipperary from Ballindoney Farm's own Olympus barley is the Homegrown Barley Single Malt from 2020, distilled at another Irish distillery under the supervision of Stuart Nickerson. It was matured for three years in first-fill Rioja Wine casks. Great importance is attributed to the terroir at Tipperary. For example, customers can use a QR code on the label to find out exactly which type of grain was used and at what time and under what conditions it was grown.
The Gin
Tipperary also releases a Farmhouse Gin, distilled in the copper pot still called Brigid. Each handcrafted batch is unique. Jennifer Nickerson's mother prepares the recipes for the Gin on a small trial still. Jennifer then carefully measures them out and doses the respective botanicals by hand.
The Production
The distillery is located in the Golden Vale, a fertile lowland area in the counties Limerick, Tipperary and Cork. It is known for its fertile soil and pure water. Good conditions, therefore, for growing barley. The Irish distillery also works according to the grain-to-bottle principle, whereby the barley is grown specifically for its own spirits. The water Tipperary uses for its Whiskeys and Gins comes from its own spring from the land on which the distillery is located.
The Tipperary Boutique Distillery has four copper stills, the largest of which is only 1,000 litres.
The History
Tipperary Boutique Distillery Limited was founded in 2014 and initially only released independently bottled Single Malt Irish Whiskeys. With the opening of the new distillery in 2020, it will now also be able to produce its first own Whiskey from home-grown barley.
Founder Jennifer Nickerson developed her passion for Whisk(e)y early on. Her father Stuart has been working in the Whisky industry for more than 40 years and his CV includes positions at Arthur Bell & Sons in Dufftown, Pittyvaich, Blair Athol, Inchgower and Bladnoch. He has also managed the Highland Park, Glenrothes, Glenfiddich, Balvenie, Kininvie and Girvan distilleries. The reopening of Glenglassaugh is also to Stuart's credit: on behalf of investors, he bought the distillery in 2008 and reopened it after 22 years and a renovation. With this close proximity to the Whisky industry, it is not particularly surprising that the daughter herself also entered the business. She first became successful with Tipperary's independent bottlings before building her own distillery with her father and farmer Liam Ahearn. The latter is the chief agricultural advisor to the Tipperary Boutique Distillery. And he, too, has a long family heritage, as his ancestors have been farming on Ballindoney Farm for more than 200 years.
