The 17-year-old Mortlach Single Malt is part of the Symington's Choice range from Signatory Vintage, which was created by Andrew W. Symington. The whisky with a full-bodied 53.8% vol. was matured entirely in a first fill Bourbon barrel. As a result, the "Beast of Dufftown" is powerful with meaty accents and a light-coloured fruit bouquet and soft sweetness. Signatory has been one of Scotland's most successful independent bottlers for 35 years. Symington and his team have always sought out rare whisky casks. These are from distilleries that have already closed, sought-after Single Malt Whiskies from distilleries that no longer release casks, or from distilleries that do not release whiskies under their own name at all. This whisky rarity from the Mortlach Speyside distillery was distilled in 2008 and bottled at natural cask strength in August 2025.

The Mortlach distillery was the first of Dufftown’s famous seven distilleries. The distillery was also the first legal distillery in the town, which is quite a distinction, especially when we consider the impressive amount of illicit activity that was occurring around the site at that time.
