Aroma Melted butter, corn, vanilla, caramel sweets, cinnamon and nutmeg. Accompanied by fresh bread, honey, ground coffee and chocolate.
Taste Tropical fruits, some apricot, brown sugar, candyfloss, sweet lemon tea and smoked chillies.
Finish Medium length and warming with cinnamon and leather. Also mint and green peppercorns.

Balcones Baby Blue is the first Texas corn on the market since Prohibition. It is made from the so-called 'Blue Corn', an actual blue, sweet corn variety from New Mexico, which is also used primarily in Mexican cuisine.

The Distillery: Balcones

The Texan Balcones Distillery was founded in Waco in 2008. Balcones distils Corn, Texas Straight Rye, Bourbon and also Single Malt Whisky. The distillery uses copper pot stills from the well-known Scottish manufacturer Forsyths - one of the few in the USA.
