Under the watchful eye of the Dalmore whisky makers, the New Make Spirit first matured in American white oak casks (ex-Bourbon), which gave the whisky a solid and balanced base of soft vanilla and honey notes. The Dalmore Single Malt was then matured in Oloroso sherry casks of various types. These included casks that were hand-selected and pre-filled with Amoroso sherry, rare Apostoles and Matusalem Oloroso sherry from world-famous bodegas. Barrels from the legendary Gonzalez Byass bodega are also included. The maturation in different types of Oloroso sherry gave the 17-year-old Highland malt even more complexity and decadent flavours. Each sherry cask had its own individual effect on the distillate, creating a rich flavour experience with summer fruits, vanilla and accents of cinnamon as well as some nutmeg and chocolate on the tongue and palate.
Dr Kristie Mccalum, Master Whisky Maker at The Dalmore said of this release, "We created the 17 Year Old to showcase more sweet oak influence and a finer spice - culminating in this whisky with an inherent richness and decadence."

The Distillery: Dalmore
Die Dalmore Brennerei wurde im Jahr 1839 gegründet. Die Brennerei wurde lange vom adeligen schottischen Mackenzie-Clan geführt. Ein Mitglied des Clans rettete einst König Alexander III auf Hirschjagd das Leben, indem er einen ihn angreifenden Hirschen in letzter Sekunde erstach. Daraufhin war der König so dankbar, dass er dem Mackenzie-Clan gestattete den königlichen Zwölfender Hirschen auf ihrem Wappen zu tragen. Noch heute ist dieses Symbol auf den Dalmore Flaschen abgebildet. Schon 1874 wurden dort vier Brennblasen verwendet, 1966 wurde dann auf acht aufgestockt.
