The 16-year-old Mannochmore from the Cask Strength Collection by Signatory Vintage was created as Symington's Choice by Andrew W. Symington from one of 2 sister casks. Symington personally selects rare casks for the series from distilleries that reflect the craftsmanship and tradition of Scottish distilleries. Often the distilleries are no longer active, no longer release casks or no longer produce whisky under their own name. For example, Mannochmore, which is finished in a first-fill Pedro Ximénez sherry hogshead, is one of these whisky rarities, which are always bottled at natural cask strength without chill-filtering.
